Single bevel knives

Traditional single bevel knives are very different from what the western kitchen is used to. They are asymmetrical and struggle to cut straight, they are instead extremely sharp and are mainly used for cutting thin slices of fish or vegetables.

• Deba (fileting fish)
• Usuba (vegetables)
